Lately, I’ve been trying out different pizza joints to see if the smaller businesses are any better than good old Pizza Hut or Dominoes. While I’ve yet to try a pizza that I don’t like, I can’t say I’ve been overly impressed by the new places I’ve tried, namely Naked Pizza and Lost Dog Pizza. Both are cool ideas.

Naked describes themselves as “an honest diversity of all-natural, whole food ingredients that taste better and are better for you.” and Lost Dog rescues, sponsors and places hundreds of abandoned and unwanted animals as part of their mission. I support them and like them both but didn’t love them more than the chain standbys. Next up? The Italian Store — which I’ve heard is out of this world. We’ll see. 


 Homemade Baby!

But, what’s the real point of this post? Ahh yes, the HOMEMADE pizza I threw together last night that was absolutely delicious. You may remember when I tried this pizza a few months ago and …lost it to the broiler. I was much more careful this time and success was found! (Thank you Ravie Nom Noms!)

I am a cheese girl. I’m also a gluten girl. But I will say, I accidentally bought fat-free feta cheese for this & it was still awesome so…ya never know. Want to make this pizza? Here’s the recipe:

Peach, Parmesan & Feta Pizza
  • Instant pizza dough
  • 1 tablespoon olive oil
  • Pizza sauce
  • 1 grilled chicken breast
  • 1/2 container feta cheese
  • 1/4 cup of parmesan cheese
  • 1 bag mozzarella cheese
  • 3/4 can peach halves, sliced down the middle
  • Red onion, sliced or diced
  • 1/4 cup balsamic vinegar

Directions:  Preheat oven to 450. Make pizza dough into round shape and cover with the olive oil. Grill chicken before adding as an ingredient. To the raw dough, add pizza sauce, mozzarella, onions, peaches, feta and chicken. Cook pizza on lower rack for 15-20 minutes (WATCH it because it can burn easily!). Boil balsamic for 3-5 minutes till it condenses down. When pizza’s done, drizzle balsamic all over it!


Other Things In Life

So, aside from the ONE thing I’ve cooked in the past three weeks — I’ve been reading. You know I’m a crazy reading fool. This month’s book club choice was “Closer than your Skin.” I enjoy a Christian devotional type of book now and again but this one isn’t really speaking to me. It’s all right and I am being motivated to pray more through reading it so that is a good thing.

Secondly, “The Thorn Birds.” Rick wanted me to read this for some reason (he says because he watched the mini-series as a kid) and I was really skeptical. However, I’m totally taken by it and almost finished. It’s like a 50-year drama about a family in Australia. I never would have picked this book for myself but it’s really good. Anyone read it? I kind of want to see the mini-series now!


Also, I recently purchased a frame to put on the wall.
I took some of my favorites shots from DC, that I took, developed them in black and white and put in the frame. I think the White House shot is great — and the Penn Ave one. Other photos include the Georgetown Waterfront, FedEx Field, Mt. Vernon, the Capitol and the Potomac.


Oh man, do I miss Trader Joes
. I used to go all the time because it was convenient. Since I’ve lived in Virginia, though, the trips are few and far between. It’s always SO crowded at the closest one — and I can’t stand it. But I stopped by a different location while visiting Michelle this week and found all kinds of gems, including this pumpkin spice granola! What IS it about TJ’s? They always have the best, most original stuff that you can’t find anywhere else. Totally genius!
