Last night, I made Parmesan Crusted Chicken Breasts with Tomato and Basil and Potatoes with Peppers and Onions. I didn’t do the step by step as much this time but it did turn out delicious. Something about frying the chicken with the shredded parmesan cheese on the outside was perfect. I managed to get the chicken JUST right so it was still juicy and not dry.

I have to admit, it does feel good to put something together and have it come out tasting good. There is a sense of pride in cooking something and having others enjoy it. And to be honest, I have been surprised how good things have turned out — which gives me a lot of encouragement. I just need to get a printer so I stop getting food all over my laptop trying to read ingredients.

We had Breyer’s chocolate Oreo ice cream for dessert and decided it is the BEST ice cream we’ve possibly ever had. I had a lot of it. For that — I was up early working my butt out!
