Walnut Crusted Salmon. Wow — it’s been a good while since I’ve had a real “food post” up here! It’s not because I stopped cooking — just because I got lazy about taking photos and making things that were photo-worthy.

I figured this was a great time to jump back in since I happened to make a simple, delicious and gorgeous (not to mention super healthy) meal recently.

Walnut-crusted salmon. I just happened to have leftover walnuts and wasn’t sure what to do them. Enter my new package of Sizzlefish. I’ve always been a fan of “crusted” types of things and walnut crusted salmon seemed like a great idea.

A Note on Sizzlefish

Sizzlefish is awesome. What I love about them is that you order a variety pack of fish so you get all kinds to freeze and try different ways.

More importantly for me, the product was created by athletes for athletes. We all know how important fish can be to a healthy diet, especially that of an athlete. Having all these different options (especially that I wouldn’t by standalone at the story) has helped me get creative.

I also got to meet the founder, Rob, recently at the Blend Retreat. He was a really nice guy and you can tell how much he believes in this product.

walnutsalmon.jpgHow did I make this delicious creation? SO easy! I didn’t use a receipt or anything!

  • Thaw salmon
  • While thawing, cook brown rice in the rice cooker
  • Heat oven and roast asparagus with olive oil, salt and pepper
  • Crush walnuts in food processor
  • When salmon is thawed, dip each piece into an egg & milk mix
  • After the egg & milk mix, cover each piece of salmon in crushed walnuts
  • Add salt and pepper
  • Cook in oven at 350 for about 15 minutes

That’s it! It takes no time at all and it’s a simple, healthy, delicious meal that you can feel good about. I feel so much better about myself when I eat something good for my body, especially at dinner which is the hardest part of the day for me when it comes to food.
