I’m starting to realize putting nuts on pizza is a thing. Who knew? It makes sense — I mean when you order a cheese plate at a restaurant sometimes it comes with nuts or some kind of fig jelly. However, I think the man in my life may be getting a little tired of these girly pizzas. Every time he has been asking, “where’s the sauce? where’s the meat?!”
Nevertheless, I continue to love my little pizza creations. I’d like to come up with my own unique concoction sometime soon but for now, I’ve got a list of awesome combos to try. Today’s was sweet and light — which is generally a perfect pairing for dinner in my opinion. Hope you enjoy!
Ingredients:
- Prebaked pizza crust
- 1 red pear, cored and sliced thinly
- 1/4 cup(2 ounces) crumbled low-fat goat cheese
- 1/4 cupchopped pecans
- 1/4 cupthinly sliced red onion
- 1 tablespoonfig vinegar or balsamic vinegar
- 1/2 tablespoon honey
- 1 tsp. olive oil
- 1/2 cup mozzarella cheese
Directions:
Place a prebaked pizza crust on a shallow baking pan; mix honey & olive oil together and spread atop the crust; top evenly with sliced red pear. Sprinkle with goat cheese, mozz cheese, chopped pecans, and sliced red onion. Bake 8 minutes or until pears are tender. Drizzle with fig vinegar or balsamic vinegar.
