So while I was laid up like a cripple yesterday, I found some new cool recipes to make. Apparently, crack part of my rib, which has caused residual pain on the right side of my body including head, shoulder and neck. I went to the doctor yesterday, got an X-ray and was basically told there was nothing to do but wait it out and take Motrin. Awesome.

What this means for my work out routine, I’m not sure. But I will tell you, ladies and gents, I’m not feeling very positive. I wish I still lived in my old apartment with the swimming pool…that is the workout for the injured, you know?
Sigh. I guess Crossfit is getting tabled for now. Just cancelled my gym membership so I could switch but can survive on the great outdoors and my apartment treadmill for awhile.
The funny thing is, I don’t know how this happened. They said it could have been from coughing a lot when I had a cold last week. Really? Dude, my bones are getting brittle. Sounds like this girl needs to get some Vitamin D in her life.
Before we move on to pizza, I had to share with you a photo of my friend & former roommate, Kristyn, and I this weekend. We met during our internships almost six years and lived together for a couple of years. It’s nice we can still meet up and catch up like no time has passed at all.
Congrats to Kristyn & her fiance on their upcoming wedding! Also, she sent me some sweet soup recipes to make in my food processor so stay tuned for those!
When I saw this photo & recipe the other day, I knew I had to make it. All things I love: goat cheese, pesto, shrimp. Put them together? Yes ma’m! This was one of the easiest things I’ve ever made and it tasted great.
I used pre-made pizza dough (Boboli) for the first time and was not a big fan of the taste. Next time, I will use homemade for sure. Another tip? I went overload on the goat cheese because it’s one of my favorites but it is way overpowering so use it sparingly. I ended up picking some off my pizza actually!
- Pizza crust (homemade or store-bought)
- Pesto (homemade or packet mixed with olive oil)
- 1 Cup Mozzarella cheese
- 1/4 Cup of crumbled goat cheese
- 20 baby shrimp, slightly cooked before oven.
Directions: Unthaw frozen shrimp by cooking with a little olive oil & garlic salt in a pan but don’t cook them all the way. Mix the pesto and spread evenly across the pizza dough. Spread mozz cheese evenly. Then, add shrimp and goat cheese. Bake at 375 for about 15-20 minutes. Keep an eye on it. I like mine really well done.
