Flourless Dark Choclate Fudge Cookies

So when I was in high school, there was this place in the mall called The Great American Cookie Company. You can imagine how amazing it was. In fact, my sister actually worked there and would bring home bags of leftover cookies from work (terrible idea, by the way.)But anyway, my absolute favorite cookie to "buy" (aka have my sister sneak me for free, shhh!) was a chewy, gooey, fudgy double chocolate cookie. Butterscotch-Pumpkin Cake Cookies

Pin ItBack in October when I started getting into a pumpkin-y mood, I was so excited to get some pumpkin and get to baking. To my dismay, twice I went the store and found they were sold out of pumpkin! So when I went back later, I stocked up on a stash of like 10 cans -- just in case. That means, it's nearly March and I've got to use up these cans! I also had a bag of butterscotch chips that were waiting for a home. When I ran into these pumpkin-butterscotch cookies over at Joy's place, I knew what I was making!So my cookie pan could use some work but look how amazing those melty butterscotch chips are! Oreo-Stuffed Peanut Butter Cookies

When I saw Oreo-stuffed peanut butter cookies on "The Girl Who Ate Everything" -- I knew they were for me. Obviously, anything with peanut butter makes me perk up and who doesn't love Oreos? Actually, I always order half Oreo, half Reese Cup blizzards when I go to Dairy Queen so obviously these cookies were custom made for me. There is something therapuetic about the mixer, don't you think? I love dumping all the ingredients in there and then just blending it all away together -- smoothing out the lumps and licking the glorious concoction from the beaters. Two full sticks of better and a whole cup of brown sugar?
